From Tank to Bottle
ONCE THE GRAPES are harvested, with specific blocks designated for The Pact, they’re brought to the winery for processing. The grapes are gently destemmed and the fruit is sorted, allowing us to retain optimal berries. The grapes are then placed in the tank and the winemaking process officially begins, shifting us from a canvas of rolling hills, soil and minerals, to a template of stainless steel tanks, oak barrels and graduated cylinders. We segue from nature to laboratory.

When crafting each vintage of The Pact, Jen Beloz and David Jelinek pull samples of each lot. Days are spent tasting and trialing blends using beakers and Erlenmeyer flasks to orchestrate a blend that represents the truest and best expression of the Coombsville Estate Vineyard.
