WHEN THE TEMPERATURES cool and the vines are bare, the work begin done is mostly underground. Teams compost and plant cover crops between rows, crops that fix nitrogen in the soil to give the vines more power. The soil moisture is replenished with winter rains, bringing the roots nutrients harbored in the soil. Vine pruning is a time to lay the foundation for the growing season ahead.
